If you need to defrost meat in a hurry there is an old trick that cooks like to use that is fast and safe. 

It is not instant but it is a lot faster than letting the meat sit on the counter and thaw by itself.

It is also faster than placing the meat into cool water to let it thaw.

Pancakes are made from mix, mash potatoes from dried flakes and cookies are cut from plastic tubes of dough.  

When women set off to the work force in droves in the 70's a market opened up to feed on their guilt that they were not being good mother's or wives and that could all be solved by convenience foods. This was the first generation of women who struggled to do it all. 

Advertisers continually harp on us that cooking from scratch is not only hard, but time consuming and ridiculous to try.

Birthday Candles when you have no cakeNot everyone wants to have a birthday cake on their birthday but how do you incorporate having candles that they can blow out?

When your birthday person asks for a pie, donuts, or ice cream for their treat then it can be a challenge to incorporate the candles into the festivities.

One trick that I have always liked to do is place the candles on  the serving dish that the treat is going to be presented on.

It is easy to do but you have to follow some guidelines.


Glossy Wrapping for Candy Boxes

Candy boxCandy boxes tend to have a shiny glossy paper wrapping that is hard to emulate.

Regular paper will look nice but it doesn't have that sheen to it. Wrapping paper that is glossy rarely comes in white.

You could hunt down the type of paper you are looking for at specialty paper supply stores but there is a very inexpensive option that will give you the candy box look that you are looking for.


Making Chocolate Roses

Roses and chocolate, aren't they both the very epitome of romance? How about the two of them together, chocolate roses? While these look as dainty as porcelain they are very easy to make.

The secret is what it is made from. When you mix any type of chocolate with corn syrup you will get a pliable chocolate, called molding chocolate (and also known un-appetizingly as chocolate plastic)  that you can mold into almost anything. Better yet you can make this days ahead of time and it will keep beautifully. 

You don't need any fancy molds or special tools to make these roses, all it takes is a bit of time and practice.

I always make way too much food when I have the family over (especially the sweets) and they are always delighted to take some home with them. 

Though I try not to buy any food in excess packaging some times it can't be avoided and through out the year I keep the light plastic containers that many bakery, fruit and vegetable come in.

I clean them out and use them for take out containers for my guest. But I also have my little trick of making them look fancy-shmancy.

In professional kitchens no scrap goes unused, their bottom line depends on it and they will make little novelty weave cookies from these scraps. 

Incredibly easy to do they have a simple elegance to them that belies their origins as left overs. Add a sprinkling of icing sugar and it looks like a master piece.
