While there are recipes out there for making similar ideas with cake balls I wanted something a little faster, easier and that could be done with children.
These give you a lot of bang for your buck and are fast enough to make that the kids won't get bored or restless. While I make these with strawberry wafer cookies you could substitute another favorite flavor like lemon, lime or plain vanilla (chocolate cookies might be too dark and show through the coating).
Ingredients:



Melt the white chocolate in a double boiler over a very low heat or in your microwave in 15 second intervals (you do not want to burn or scorch it) and let cool slightly. Add a tiny amount of paste yellow food coloring (I used coloring paste as water based coloring will make the chocolate seize up).







One bag of wafer cookies (300g)
125g of cream cheese (half a box)
3/4 cup of white chocolate
Paste Yellow food coloring (NOT liquid food coloring, it will ruin the chocolate)
Chocolate sprinkles
Red star sprinkles
In a bowl beat the cream cheese until it is softened. Crush the wafers in the bag very carefully so the bag does not split or if you are doing this with children put in a freezer bag and crush them in that.
Add the crushed cookies to the cream cheese. I find that it is easiest to mix it with my hands (your children will love doing this).
Take pieces of the dough smaller than a golf ball and roll them in your hands to make them perfectly round. Set them all aside in the refrigerator to firm (about 15 minutes).
With the cookie ball on a fork, dip it into the colored white chocolate. Pull the cookie ball off the fork so the undipped side is on the bottom.
Before the chocolate sets too firmly place using a pair of clean tweezers, make a red beck with one red star sprinkle and red comb on the top of the head with two red star sprinkles and then with chocolate sprinkles make eyes. (An adult with a stead hand can do this part). If the chocolate has set hard then just melt a little left over chocolate and use that as a glue.
You will quickly have a whole flock of these sweet chicks. Fast and easy this Easter treat packs a lot of punch and tastes great.
